With the heat that makes it, what I most want is to eat fruits, salads and refreshing drinks like this Healthy And Light Vegan Meringue Milk; it is not as dense as the traditional one, but it is healthier and lighter, and it is incredibly delicious.

Healthy And Light Meringue milk is usually made with cow’s milk, egg white, cinnamon, and white or refined sugar.

To prepare our version, you can use the vegetable milk that you like the most, although I prefer to use almond or cashew milk because they are creamier and do not add as much flavour as coconut milk.

Instead of sugar, I have used maple syrup, but any sweetener can work. I also recommend that you try the mixture in case you prefer to add more sweetener.

I have not substituted the whipped egg whites because I wanted a simpler and more refreshing version, but if you wish, you can add some whipped vegetable cream or coconut cream to make it more full-bodied thicker.

Serve the Healthy And Light meringue milk very cold, so it will be richer and help you fight the heat. On top, you can add a little ground cinnamon, but it is entirely optional.

Ingredients SCALE (1x)

  • 4 cups of almond milk (1 l)
  • the skin of a lemon
  • One cinnamon stick
  • Four tablespoons maple syrup
  • Cinnamon powder to decorate

Ingredients SCALE (2x)

  • 8 cups of almond milk (2 l)
  • the skin of a lemon
  • Two cinnamon stick
  • Eight tablespoons maple syrup
  • Cinnamon powder to decorate

Ingredients SCALE (3x)

  • 12 cups of almond milk (3 l)
  • the skin of a lemon
  • Three cinnamon stick
  • 12 tablespoons maple syrup
  • Cinnamon powder to decorate

Instructions

  1. Put all the ingredients in a pot or saucepan and stir.
  2. Cook over high heat until it comes to a boil.
  3. Remove from the heat, cover and let it cool to room temperature.
  4. Strain the milk, store it in an airtight glass bottle or container in the fridge until cool.
  5. Serve with a bit of ground cinnamon to decorate and add more flavour.
